Elderflower and Lemon Jelly With Summer Berries

This is a lovely light dessert for a hot day, and very easy to make. You could use any kind of berries, and you could make a different flavoured jelly by using a different cordial or syrup.

Ingredients

100 ml elderflower cordial
2 lemons
60 g sugar
200 ml water
3 sheets gelatine
Berries (I used blueberries)

Make the Jelly

Soak the gelatine leaves in cold water for 5 minutes.
Heat the sugar, water and lemon peel until the sugar dissolves, then boil gently for 5 minutes.
Add the lemon juice and strain through a strainer lined with paper towels.
Squeeze out the gelatine, then stir into the warm strained liquid until dissolved. Add the elderflower cordial.

Assemble the Dessert

Put some berries in the bottom of 3 pretty glasses. Add jelly mixture to cover. Leave in the fridge to set (keeping the rest of the jelly at room temperature). When set, top up the glasses with the rest of the jelly mixture. Put in the fridge to set.

Serve and Enjoy

Top each jelly with whipped cream or yoghurt and berries to decorate.
