Fast & Easy Stew
My wife's health has deteriorated and she no longer cooks, so that makes me "Chef, Cook & Bottle Washer". I spent 20 years on the fire Department and have done plenty of cooking, but I look for fast easy recipes.
This is one I came up with pretty well duplicates what she used to make. It's fast & easy; requires no cooking; all ingredients come in cans; it can be stored in refrigerator and heating up. A serving heated in the microwave takes only 2 minutes, pausing to stir every 40 seconds to keep it from popping in MW.
Let's get started:
INGREDIENTS
The ingredients are pretty basic and healthy:
1 - 18.5 oz can of "Progresso Traditional Beef & Vegetable Soup". My favorite, but you might try other flavors
1 - 14 oz can of "Hunt's Petite Diced Tomatoes"
1 - 14 oz can of "Libby's Cream Style Corn" Cream style doesn't pop n microwave as bad as whole kernel.
1 - 14 oz can of "Bruce's Cut Okra" If this is not available, use a can of cut carrots or potatoes.
MIXING & STORING IN "FRIG
Drain the Okra,
Add all ingredients to a medium sized plastic container with lid and stir to mix.
Store in closed container in refrigerator.
HEAT 'N EAT
Dip a serving into bowl
Cover & heat in microwave for a total time of about 2 minutes, stirring every 40 seconds.
