Supplies
Steak: filet mignon steak, mushrooms, red wine, butter, all purpose or steak seasoning (Old Bay), salt, and pepper.
Sweet Potatoes: sweet potatoes and olive oil (add brown sugar if sweet potatoes are not sweet enough after roasting)
Bacon Wrapped String Beans: 5 String beans each, 1 slice thin cut bacon each, olive oil, and salt (optional).
The Sweet Potato Side
Note: The sides you use with the steak take much longer than the steak itself takes to cook, about 20 mins in the oven, plus prep.
Preheat the oven to 400F or 200C.
Rinse and peel the skin off the sweet potatoes first.
Slice into Cubes and place into a large bowl.
Drizzle olive oil over the sweet potatoes and mix in the bowl.
Place baking paper or foil over a cooking tray and spread the potato slices over the tray.
Bacon Wrapped String Bean Side
Note: always use fresh string beans.
Preheat oven to 400F or 200C (if you skipped the sweet potato step)
Carefully rinse all the string beans.
Pinch off the ends of all the string beans you will be using.
Lay down a piece of thin cut bacon and place 5 string beans on top, then roll bacon around the string beans.
Carefully brush a little olive oil on the ends of the string beans, not the bacon.
(Optional) sprinkle a little salt on the ends of the string beans.
The Steak
Take out the steak 30 minutes before cooking and let it come to room temperature.
If you would like to make it with mushrooms and wine sauce, start cutting the champignon mushrooms into slices.
Next prepare some garlic by peeling it and slicing it into small slices (or using a garlic press like in the YouTube video)
Heat your pan to medium-high heat and melt the butter.
Place the steak on the hot pan and then the garlic.
Season each side of the steak on the pan with all purpose seasoning, salt, and pepper.
Cook both sides for about 4 minutes each and brown the sides for a good medium rare steak. (Cook longer for well done)
After the steak is cooked remove the steaks and set them to the side.
Using the same pan with leftover steak juice, butter, and seasoning, pour a little bit of dry red wine onto the bottom pan and let it come to a boil.
Mix in mushrooms and salt.
Assemble the Dinner
Place the sides onto the plate.
Place the steak onto the plate and carefully pour a little wine sauce and mushrooms on top of the steak and enjoy.
