Flavor Infused Sourdough Bread
Hi Everyone,
Today we are making two different sourdough bread loaves with a flavored swirl through them. The first is a Bacon, onion and cheese loaf, and then two sweet sugar-spice loaves.

Ingredients for Sweet-spice Bread
For the sweet-spice sourdough bread you will need:
- 50g Butter
- 1/2 cup Brown Sugar
- 1/2 Teaspoon Mixed spice
- 1/2 Teaspoon Nutmeg
- 1 Teaspoon Cinnamon
This is enough for two loaves.
Prepare Sugar-spice Mix
In a bowl whisk together your brown sugar, mixed spice, nutmeg and cinnamon.
Tins
To prepare your tins, line three tins with baking paper, lining it up the sides making it easier to take out the loaves once baked.
Melt Butter
Melt your butter then set aside until you are ready to use.
Stretch Dough
Once your dough has risen for 3-8 hours until it has at least doubled in size tip it out onto a lightly floured bench then let it rest for five minutes before shaping. Cut your sourdough into thirds. [In the pictures we have only cut dough into half because we had the other third in a different bowl]. Take one section of dough and stretch it out into a long rectangle.
Topping and Rolling
With a pastry bush or spatula spread the butter all over the dough, then sprinkle on your spice-sugar mix. Using a spatula to help, begin rolling one end until the dough forms a loaf shape. Once it is rolled up carefully place your roll into the prepared tin.
Ingredients for Bacon Bread
For your savory sourdough bread you will need:
- 1 Onion
- A few bits of bacon or two rashes
- 1 Cup grated Cheese
This is enough to make one loaf.
Prepare the Filling
First off cook your bacon, then cut into little pieces and set aside. Finely chop the onion and using the same pan, cook onion until translucent and lightly browned. Mix the onion and bacon together and set aside until ready to use. If using block cheese, now is the time to grate it.
Stretching More Dough and Topping
Stretch out your dough into a rectangle the same way we did the sweet-spice loaf, then add your bacon/onion mix. Finely, add cheese and a sprinkle of pepper on top (if you like pepper!).
Roll the Dough
Start to roll up dough, remembering to tuck both ends under when placing in tin.
Rising and Cooking
Set your loaves in a warm place with a damp tea-towel over top and leave for about 2-5 hours or until nicely risen.
Pre-heat your oven to 220 degrees Celsius then bake your loaves for 45 minutes or until golden brown.
Be Patient, Leave to Cool...
Once baked tip out onto a wire rack and cover with a few tea-towels until cool. If you don't cover with the tea-towels the crust will be quite hard.
Ready to Eat!
Once cool cut open and enjoy your delicious flavored sourdough breads; perhaps spread with butter.
