Fresh Fruit Delight

How about all your favorite fruits chopped down into a healthy bake?? It is not only pleasing to your eyes, but to your tummy too. You may use any seasonal fruits and add in dry fruits too, for that additional crunch. Made partly with wholewheat flour, this cake is healthy too. And it uses oil, instead of butter. So here is the recipe to prepare this colorful and delicious cake.

Ingredients

Ingredients:

Wholewheat flour - 3/4 cup

All purpose flour - 3/4 cup

Baking powder - 1 tsp

Baking soda – 1/4 tsp

Salt - 1/4 tsp

Sugar (powdered) - 1 cup

Honey - 2 tbsp

1 clove + 1 small cinnamon stick + 1 cardamom - crushed

Eggs - 3

Oil - 3/4 cup

Fresh orange juice - from half an orange

Vanilla essence - 1 tsp

Fresh fruits (thinly sliced) - to cover the bottom of the pan ( I used orange, kiwi, plum) Make sure to use ripe ones, my plums were little sour.

Fresh fruits (diced) - 1/2 cup ( to be mixed with batter, i used the same fruits as above + banana)

Dry fruits - 1/2 cup ( I used fresh & dried dates, almond, pista, cashew & raisins)

Coconut (grated) - 2 tbsp

Sieve Together All the Dry Ingredients Twice. That Is, Both the Flours, Baking Powder, Baking Soda, and Salt.

In a Large Bowl, Whisk Together the Oil and Sugar.

Add in the Eggs One by One, Whisking After Each Add.

Once Blended Well, Add the Crushed Spice Mix and Vanilla Essence, and Mix Well.

To This Mixture Add the Orange Juice and Honey, and Mix.

Now Slowly Add the Flour Mixture to This and Fold in Carefully.

Take 3/4th of the Dry Fruits and Dust Them With Little Flour and Add to the Batter, Mix.

Add Diced Fruits Too.

Preheat the Oven to 180 Degree Centigrade.

Grease the Cake Tin.

Sprinkle Some Sugar to Cover the Bottom of the Tin.

Now Arrange the Sliced Fruits and the Remaining Dry Fruits on the Pan.

Drizzle the Grated Coconut Over This.

Now Pour the Batter Carefully.

Bake for 35-40 Minutes, Until a Toothpick Inserted Comes Out Clean.

Allow to Cool, and Then Relish the Fruit of Your Hard Work.. ;)
