Fried Crab Orbs

Balls of crab meat, wrapped in wonton wrappers and fried. Based off the recipe for "Crunchy Spider Surprise" from the World Of Warcraft Official Cookbook.

Supplies

1 Separated Egg

8 Ounces Wonton Wrappers

1 Pound Crab Meat or Imitation Crab

1 Teaspoon Salt

1 Teaspoon Sugar

1 Tablespoon Potato Starch

Pinch of red and black pepper

Oil for Frying (Peanut or Vegetable work best)

Separate the Egg

Separate the egg. This can be done by any method you like. Put egg whites and yolk in separate bowls. Set aside for later.

Chop Wonton Wrappers Into Strips

Slice the wonton wrappers into strips. This is best accomplished by leaving them in the stack they came in. You will need a lot, even for small amounts of orbs.

Combine the Materials

Combine the crab meat, salt, sugar, potato starch, egg yolk, and seasoning in either a bowl or a food processor. This will determine the consistency of your finished product. Combining in a bowl will lead to larger chunks of crab, while a food processor will lead to a smooth consistency. Mix very thoroughly either way.

Form the Meat Into Balls, and Wrap

Roll the meat/yolk/seasoning combo into balls. Dip each ball into the egg whites. After dipping, wrap in wonton strips until completely covered. Squeeze gently to make sure the strip stick together.

Fry Those Suckers

Lower each ball into hot oil. Let cook for several minutes on each side, until the inside is cooked and the outside is crunchy. Crab needs to be cooked to 140 degrees F to be safe to eat. Use a food thermometer or your best judgement.
