Frog Egg Pudding

CALLING ALL BIOLOGY TEACHERS!!! If you are looking for a fun snack to go along with your amphibians chapter this year, then look no further. This recipe is a playful spin on tapioca pudding.There are two things that have always reminded me of frog eggs. #1. Tapioca pudding and  #2. kiwis. So I decided to combine the two and create a desert that has the appearance and texture of frog eggs!  

You will need:
3 Tbs Instant Tapioca
2 cups of milk
3/4 cup of coconut milk
6 Tbs of sugar (you can reduce this if you would like. The coconut milk is fairly sweet on it's own)
1 egg lightly beaten
2 kiwis 
green food coloring
OPTIONAL: 1 tsp. vanilla (the recipe on the box calls for vanilla but I made mine without & it was great)

In a microwavable bowl, mix together the tapioca, milk, coconut milk, sugar, and the egg. 
Let it sit for 5 minutes.
Cook it in the microwave on high for 12 minutes. (stopping to stir it every 3 minutes)
While it's cooking peel & mash the kiwis with a fork.  TIP: Easy way to peel a kiwi
Once it's cooked remove it & stir in the kiwis & a few drops of green food coloring. (Add your vanilla if you would like)
Refrigerate it for 20 minutes to cool.
NOW YOU CAN EAT IT!

To serve mine. I spooned it into glasses & topped it off with some whip cream and a plastic frog. My children loved it! They were all smiles & giggles! I think the flavors together are delicious too. The coconut compliments the tartness of the kiwi perfectly.
