Fry Bread Chicken Tacos

A really nice change of pace from the usual tortilla tacos.

The fry bread is really easy and takes just a few minutes.

What You Need

Here's what you need to gather up for making these great chicken tacos.
Ingredients for Chicken:
1 cup chopped onion
1 Tablespoon olive oil
1 garlic clove, minced
2 Cups cooked chicken, shredded
1 Can of Rotel tomatoes, or if you can't find Rotel use canned tomatoes and a can of green chilies.
1 Cup Chicken Broth

Fry bread. You can buy these, use your own recipe, or use my recipe.

Condiments for tacos:
Taco Sauce or Salsa
Refried beans
Diced Tomatoes
Shredded lettuce
Sour cream
Shredded Cheese
You get the picture. You know...taco stuff.

Ok lets doctor up some of that leftover chicken from dinner the other night.

We'll start by chopping up the onion and the garlic.

Take your cooked chicken and using two forks shred it with the grain into small chunks. Shredding it will give the most surface area for absorbing the flavors and it also keeps it tender.

Saute the onion and garlic in the oil for a few minutes until the onion is translucent. Saute is medium low heat in case you're wondering.

Now dump all that chicken in there with the vegetables.

Add the tomatoes and the chicken broth and mix it all up in the pan.

Turn the heat up to medium and let that stew in there for about 20 to 30 minutes, just stirring occasionally.

Take your fry bread and spread it with some warmed up refried beans.

Pile a couple of Tablespoons of the chicken on there.

Dab a scoop or two of sour cream on there now to stick your lettuce onto so it doesn't fall off so much.

Add lettuce.

A couple or the diced tomatoes now and douse liberally with your favorite salsa or taco sauce.

Sprinkle with shredded cheese and fold it in half on the way to your mouth. It helps to use a knife or something to hold the middle down while you bend the sides up.

Don't feel bad if you piled it too high with all that good stuff and made it too messy to eat, just get yourself a knife and fork and call it a tostada.
