Ghost Onigiri

Boo! These little ghosts are just dying to appear in your lunchbox or get shared at a potluck! Onigiri are traditionally triangle or ball shaped, they make a great snack, side or even an on the go meal. Scare some up and share with friends!

Ingredients

You'll need:
3 cups sushi rice
2 cans tuna
2T soy sauce
2T mirin
2T sugar
Nori
Japanese mayo
Salt
Cute face hole punch from Japanese bento store
Chopsticks
Rice paddle
Heavy duty saran wrap
Small cup or bowl
Makes 20

Make Tuna and Rice

Make 3 cups of your favorite Japanese rice by your favorite method, for example
Wash rice several times, let drain in strainer for 15 min. Add 3.5 c water and let sit 30 min, bring to boil with lid on, then turn heat to low and let simmer for 25 min. Turn off heat and let set 15 min.

Meanwhile, mix sugar, soy sauce and mirin in a bowl and pour over tuna in a pan, heat until liquid evaporates. Set aside until rice is done

First cut out faces and set aside, I found towards the end doubling the nori helped it punch better but maybe I had cheap nori

Lay saran wrap over cup, sprinkle with salt, add a lump of rice with paddle, then use chopsticks to poke a well and fill it with tuna and a squeeze of mayo.

Top with the other half of rice, gather saran wrap and loosely form a ball, then twist the wrap tightly.

Untwist to add face and then twist plastic. Now you have a delicious ghost! Make the rest, you should yield about 20. Enjoy with friends! Happy Halloween!
