Ginger Loaf Made With Sourdough
What is it about loaf? The moist texture...the presence of fruit. Some like to eat it plain while others choose to spread with butter.
Mmmm, so hungry right now...
Here is our take on the traditional fruit loaf, using wonderful and healthy sourdough combined with the excitement of ginger and topped with icing.
Ingredients
- 135 grams of flour
- 30 grams of sourdough starter Sourdough Starter
- 155 mls cold water
- 1 tablespoon of fresh ginger
- 80 grams of sugar
- 1/4 teaspoon baking soda
- 5 pieces of finely chopped ginger
- 50 grams of butter
- 2 teaspoons of apple cider vinegar
Mix It
Mix together flour, sourdough starter, crushed ginger and water.
Add baking soda and sugar to the dough.
Add the chopped ginger and half of the melted butter.
Finally add the apple cider vinegar to the remaining butter then mix into the dough.
Mixture Meets Tin ("How're You Doin'?)
Prepare a loaf tin then pour in the mixture.
Bake at 180C (360F) for 50 minutes then when slightly browned remove from oven and allow to cool on a rack.
Icing, Icing, Baby
Combine icing sugar, 1/4 tsp of powered ginger and water.
Spread the icing over the loaf and enjoy!
Pro tip: For extra decadence, serve with a dollop of freshly whipped cream and enjoy with a hot cup of tea or coffee...so good!
