Gluten Free Quesadilla / Roti
I would call it a wrap. My Pakistani friend and neighbor would call it a roti or chapati.
Either way we would both call them tasty.

The Stuff
2/3 cup cassava flour
1/3 cup sorghum flour
1 tbsp olive oil
1/8 tsp salt
1/2 cup warm water
Ghee or butter to brush on
Parchment paper
Plastic wrap
Mixing bowl
Fork
Rolling pin
Cast iron frying pan
Create Dough
Mix dry ingredients.
Drizzle in oil and mix with a fork.
Slowly add water while mixing.
Kneed into a soft ball.
Wrap and Rest
Now wrap the ball in plastic wrap.
Let it rest for 30 minutes.
Make the First Wrap
Pull off 1/4 or so of the ball and re wrap the rest.
Roll into ball and press down with palm.
Roll between sheets of parchment paper.
Cook
This is not what I was expecting, but its the first one.
An ugly one for sure.
Brush lightly with butter after flipping.
Make More
So this time I rolled out a bit better one.
Make Even Better Ones
So this time I roll a bit then press edges back into a circle.
This technique makes the shape I was hoping for.

I like this shape.
Repeat
Repeat rolling and cooking until you have used up all the dough.
Eat the Ugly One
I added shredded cheddar cheese, crushed meat balls, green olives and diced onion.
Microwaved for 15 seconds and folded over did the trick.
It was delicious.
Minor adjustments in water content, thickness and cooking time might be required.
Individual preferences will give a more personalized result.
A bit of hot pepper powder might be nice.
