Pour cold water into a pot, then put the diced potatoes into the cold water and cook on medium high heat.

When the potatoes become soft, pour out the water and mix with a little milk, salt, and pepper.

Mash the potatoes and let cool.

After the mashed potatoes cool, crack an egg into it and mix it in.

Mix in your minced onions and mushrooms.

Assemble the Gotcha Roast

Place 5 or 6 thick cut pieces of bacon vertical going left to right. The pieces of bacon must be touching.

Place 2 more pieces across the other pieces going horizontal with the ends extending past both sides.

Scoop and shape the mashed potatoes on top of the bacon. Not too much, it must be completely wrapped in bacon.

(Optional) You can use cooking string to wrap the bacon tight so it does not open when it is cooking.

Wrap the potato mix completely with the bacon and roll the loose side to the bottom.

Place in the oven at 200C or 375F until the bacon is crispy on the outside.

The Amazing Sauce

Butter.jpg

Note: The best time to start this step is while the roast is in the oven.

Pour a little bit of dry red wine onto a pan and bring to a boil.

Pour an equal amount of soy sauce into the boiling wine.

Place a large scoop of butter into the center of the pan and mix it in as it melts.

When the butter melts and the sauce gets a little thicker it is ready.
