Grand Marnier Marinated Berries in a Sugar Basket

Fresh Berries marinated in orange Grand Marnier liquor and presented in a crunchy sugar basket. Super easy dessert and easy to put together for last minute company.

Sugar Basket

Ingredients:

  • 1/3 c brown sugar
  • 4 T butter
  • 3 T corn syrup
  • 1/3 c all purpose flour

Recipe will yield 14 servings.

Place brown sugar, corn syrup, and butter in a pot and place on range; melt using medium heat, stirring occasionally. Continue cooking until mixture begins to boil.

Adding Flour

Add flour and stir using heat proof rubber spatula. Once incorporated, turn off heat and continue stirring to eliminate any lumps.

Transfer mixture to another bowl and allow to cool completely.

This mixture can be refrigerated for a couple of weeks to have on hand for a last minute dessert.

Berries and Grand Marnier

Ingredients (feel free to use any other combination of berries):

  • 1 quart strawberries
  • 1/2 pint raspberries
  • 1/2 pint blueberries
  • 1/4 cup Orange Grand Marnier

(OPTIONAL: whipped cream for garnish)

While sugar basket is cooling, prepare the berries.

Cut up the strawberries. Toss together all berries and sprinkle with Grand Marnier. Toss a few more times to make sure all berries are covered with the Grand Marnier. Set aside. This can be prepared a couple of hours ahead.

Scoop the Sugar Basket Mixture

Preheat the oven to 350degrees.

Using a small scoop (1/2 oz batter per scoop), scoop the mixture and place no more than 5 balls on a parchment lined 1/2 sheet pan. Allow plenty of room between each ball because they will spread a lot.

Baking the Sugar Basket

Place the sheetpan in the oven and bake 5-7 minutes. Check at 5 minutes.

The sugar basket will have spread and some may have united. Using a metal spatula, cut any place where they united to separate them. Allow them to cool about 15-30 seconds. They should not be set. As soon as you can handle them (BE CAREFUL, THEY WILL BE HOT!), start picking them up with the metal spatula and invert onto the back of a muffin pan or upside-down coffee mugs. Using your hand, press lightly to shape around the muffin tin (or mug). Allow to cool completely.

Add the marinated berries right before serving.

Optional ~ add a dollop of whipped cream.
