Grilled Watermelon Salad

This Grilled salad incorporated both grilled and fresh Watermelon. The peaches were grilled to enhance the flavor and aroma. It is then topped with blueberries, feta cheese with a serving of plain yogurt sweetened and flavored with vanilla extract.

Ingredients:

Small Seedless Watermelon

3 Peaches/Plums/Nectarines (your choice)

1 Pint of Blueberries or you favorite berries

4 oz Feta Cheese

8 oz Plain Greek Yogurt

1 Tablespoon Brown Sugar or 1 Pkt Splenda/Equal (your choice)

1/2 teaspoon vanilla extract.

Olive/Canola Oil Cooking Spray

Preparing the Watermelon

The watermelon is sliced leaving the rind on and the peaches are cut in half and the seed removed.

Grilling the Watermelon

Brush or spray the grill surface with olive oil and grill until you get char marks on the peaches. Grill the watermelon until it gets a little soft. Some Charring may occur. The main objective is to enhance the sweetness.

Remove from grill once done, put in a covered contained and put in the fridge or freezer to cool off.

Putting It All Ttogether.

While the fruit is cooling, add 1 pack of Splenda or 1Tbls Brown Sugar and 1/2 teaspoons of vanilla to the yogurt.

Once the watermelon is cooled, cut away the rind, cut into pieces and put on top of fresh cut watermelon. Cut up the peaches, sprinkle with Blueberries and Feta Cheese. Pour the juice from the container on top of the salad, and top with the yogurt once you are ready to eat. If you are going to keep it in the fridge for a while, do not add the yogurt until you are ready to eat. Enjoy.
