Healthy Vegan Chocolate Oatmeal Cookies
Recently I wanted to make healthy oatmeal cookies, gluten-free as well as vegan, and these chocolate oatmeal cookies turned out very well. They are chewy, soft and absolutely delicious. These cookies are also perfect for people who love to eat chocolate (or sweets in general) because this is a healthy version and definitely satisfies your chocolate cravings. Ingredients
- 150 gr rolled Oats
- 1 Chia Egg
- 100 ml Cashew Butter
- 80 ml Agave Syrup
- 20 gr dried Blueberries
- 20 gr ground Walnuts
- 4 tbsp Cocoa Powder
- 1 tbsp Cinnamon
- 1 tbsp Vanilla Extract
- 1 tbsp Baking Powder
- A pinch of Salt
How to Make a Chia Egg
For a Chia egg, you need 1 tablespoon of Chia seeds and mix them with 3 tablespoons of water. You need to let your Chia Egg rest for about 15 minutes.
How to Prepare the Cookie Dough
Whisk oats, baking powder, cinnamon as well as vanilla extract in a bowl together. After that mix cashew butter, agave syrup in a separate bowl together and add your chia egg, mix until it is smooth. Then add the cocoa powder, dried blueberries, and walnuts. Mix everything again. Pour the dry ingredients to the wet ingredients, then mix on low until combined.
Bake Your Cookies
I used my hands to knead the dough properly. Now let the dough rest in the fridge for about 30 minutes. I formed the cookies with an ice-cream scoop and put them on the baking paper. Now bake your oat cookies in the oven for about 10-15 minutes at 180°.

Btw. you can replace dried blueberries with cranberries or raisins or add other ground nuts. You can change this recipe as you like!
