Home Made Salsa Recipe

I was delighted when my son-law-law brought home a salsa recipe from work that he likes because, I entered it into the Mexican food contest. He made it a few times and I decided to tweak it using fresh produce instead of so many canned ingredients. My daughter and I made it this way instead. It was so much tastier! I hope you like it as much as we do!

Ingredients and Utensils

What you will need:



1 28 oz Can Del Monte whole peeled tomatoes removing 3 of the tomatoes and 1/8 cup of the juice
2 Cans Herdez Salsa Casera 7 oz ( I think Ro*tel will work for this recipe as a substitute if you can't find Herdez).
1 Can sliced black olives
3 seeded and diced serrano peppers
3 -4 diced green onions or 1/4 cup diced yellow onion
5-8 Cherry tomatoes or more if you like
3 small red, orange, and yellow bell peppers
3-4 Mashed garlic cloves
1/4 Cup diced cilantro 
1/2 Cup fresh or frozen corn kernels
Juice from 1 lime
1 teaspoon salt not shown 
 
Utensils:
 
Blender, knife, measuring cups,and mixing bowl.
 
 

Wash and Dice

Wash and dice vegetables:

Dice tomatoes, onions, cilantro 
Mash garlic
De seed and dice peppers
Juice lime

Blend Tomatoes

Blend the canned tomatoes and pour into a bowl.

Combine Ingredients

Add the rest of the ingredients to the blended tomatoes:


Add the diced vegetables, Herdez salsa, olives, corn, lime juice, salt, and garlic to the blended tomatoes and mix.
Garnish with lime and cilantro if desired.

We all liked this salsa much better. We eat it with chips and top tacos with it. My son-in-law likes it on his steak! I hope you give it a try. I am going to try this recipe using Rol-tel next time, just for kicks.
