Homemade Cinnamon Rolls

My mom makes really good cinnamon rolls!  So I decided to share.

Ingredients

For the dough you will need:

4 cups flour
1 package yeast
1cup milk
1/3 cup sugar
1/3 cup butter
1/2 teaspoon salt
2 eggs
3 tablespoons melted butter
1/2 cup sugar
2 teaspoons ground cinnamon

And for the icing:

1 cup sifted powdered sugar
1/4 teaspoon vanilla
1 tablespoon milk

Mix the Dough

Preheat your oven to 375 degrees.  In a large mixing bowl combine 2 cups of flour and the yeast, then set aside.  In a saucepan heat and stir the milk, 1/3 cup sugar, 1/3 cup of butter, and salt until warm and butter almost all the way melted.  Beat together milk mixture, eggs and dry ingredients on medium speed for thirty seconds, then beat on high for three minutes.  Knead in the remaining flour until a moderately soft dough forms.  Put in a greased bowl and let rise for about one hour.  Sorry I don't have many pictures, I walked in on my mom at the end of this step and documented from here on out really well.

Shaping the Cinnamon Rolls

Punch dough down.  Divide in two, place on lightly floured surface, cover and let it sit for about ten minutes.  Flatten each portion of dough into a large rectangle, the width determines the width of your cinnamon rolls.  Brush the melted butter over the dough.  Combine the 1/2 cup sugar and cinnamon and sprinkle over the dough.  Roll it up so you get what is basically a super tall cinnamon roll.  Seal the seam.  Place some thread under the dough, wrap it around and cut off a cinnamon roll.  Repeat this process until you have cut them all, then place them on a greased pan.  Cover it and let them rise until doubled.

Icing

Stick the cinnamon rolls in the oven for 20-25 minutes.  In a bowl beat powdered sugar, vanilla, and milk.  Continue to add milk 1 teaspoon at a time until it reaches the right consistency.  Wait for the cinnamon rolls to finish.

Put the Icing On... Then Eat!

Finally put the icing on and devour your delicious warm cinnamon rolls!  Om nom nom nom!  They taste great!
