Aside from having all kinds of vitamins and nutrients, dates are a tasty snack that will keep you energized on the go. Great to bring along outdoors hiking and camping as they increase appetite control (and they taste great!).

Pitted dates

Unsweetened coconut

Vitamix or other strong blender/food processor

Coconut

Add 1-2 cups of shredded coconut to your blender to make it finer. The smaller the pieces the better it will stick. Remove from blender and set aside.

Dates

Add all of your dates to your blender and slowly increase the speed, you want a pasty result. 10-15 seconds should be enough. Scoop the date puree and move to a small bowl.

Balls

Use a spoon or your hands to make small balls. Roll the balls in the coconut and then set aside on wax paper.

Freeze

Freeze your date balls for a few hours to harden, then they can either be left in the freezer or moved to the fridge. Should stay good in the fridge for a couple of weeks, longer in the freezer.
