Homemade Iced Peach Tea

Peach tea is a great all-rounder – it can cool you down in the summer and warm you up in the winter (if made without ice). You can use any kind of tea you have at home, whether loose leaf or bagged, black or green. The peach base can be prepared ahead of time and stored in the refrigerator. I recommend serving in a tall glass with a slice of lemon.

Ingredients

  1. Peach — 3 pcs
  2. Loose leaf tea — 15 tsp
  3. Boiling water — ⅓ cup
  4. Cold water — 1 cup
  5. Sugar — 80 g
  6. Cane sugar — 80 g
  7. Lemon (for garnish) — 1 slice
  8. Peach (for garnish) — 1 slice

Brew the loose-leaf tea in advance and leave to cool and infuse. I used black tea, but green tea would work too.

Slice the peaches and place in a blender with 2 types of sugar (80 g or about 6 tbsp each) and 1 cup of cold water. Blend until smooth.

Pour the peach mixture into a saucepan and bring to the boil over a medium heat. When it comes to the boil, reduce the heat to low and simmer for about 10 minutes, until the peach mixture is dark and syrupy.

Remove the peach mixture from the heat and allow to cool slightly. If you like, you can pass it through a sieve to remove any large lumps.

Start to build the peach tea. Fill a glass with ice. Then add some of the cooled peach mixture (I added about 3-5 tablespoons) and pour the tea over it. Garnish with a slice of lemon and a slice of peach.

Enjoy your homemade peach tea! Store any leftover peach pulp in the fridge in a covered container.
