Homemade Tomato and Pineapple Jam

my mom was making tomato and pineapple jam for my granny, n i thought it will be great to make a instructable. and i got scolded from my mom for disturbing her in the kitchen,walking here and there with the camera ;) phew at last here it is.

this would be great for wedding favors whats more satisfying to the mind ;)

Ingredients

1 kg tomato
medium size pineapple
a small beetroot-to add more reddish color
sugar-to taste
salt
cashew nuts
essence-i used rose essence 

first in a pot boil water.when water is boiling off the cooker and add the tomatoes and cover with a lid for about 5 minutes.

cut the pineapple,hope you know how to cut the pineapple.i was busy when mom was cutting the pineapple and i couldn't get a pic.chop the pineapple in to small pieces. reserve a little chopped pineapple in a separate container.and get the tomatoes and squeeze all the seeds in to the same container where you reserved the pineapple. and blend the other tomatoes and pineapple, and chopped beetroot.
when it is well blended pour it into a pot.add the reserved seeds and pineapple in to the same pot

keep the pot on the cooker and cook in the slow flame.and add sugar to taste, don't worry if sugar is less you can add later on.and mix it, add salt to taste,mix,cover and let it cook for a while :)

Boil

when it reduces the quantity by 1/3, it will come to a boil and will be very thick.if it is not thick add some gelatin or some sago (tip)
and add the cashews, whole or chopped. and off the cooker and add the essence. mix well and you are done. let it cool completely before putting into bottles :)
