What You'll Need:

Tomatoes

Jalapenos

Thai Chilis

Garlic

Cilantro

Onion

Salt

Preparation: Take the tomatoes, jalapenos, and chilies and fire-roast them on a grill until the skin begins to burn slightly. It will take about 3-5 minutes depending on the heat. Then take the garlic and roast them in a frying pan with a little bit of cooking oil. They will begin turning a slight golden brown and at this point you should take them out. Again, this process should only take about 5 minutes depending on the heat.

Grind the Thai Chilies

First you'll want to take a few chilies and put them in your mortar bowl or blender. In this blend Carlito used about 8-10 chilies. Then, grind or blend the chilies into a fine powder.

Next you'll want to add some Garlic and Jalapenos to the mix. Carlito uses about 5-6 garlic cloves and 3-4 jalapenos in this blend. You can add more or less, it's what you like. Grind or blend the garlic and jalapenos into the chilies until it creates a fine pulp.

Next, you'll add the tomatoes. Before you put them in slice them into quarters or halves to make the grinding or blending easier and less messy. In this blend Carlito uses about 3-4 large tomatoes, but again, it's what you like and the proportion your making. Use what you like! :)

Finally, add some onions and cilantro to your mix and stir in in! Make sure you dice up your onions and cilantro to make it easier to mix in thoroughly and evenly.
