How to Can Chili Sauce

This chili sauce, is a favourite recipe, perfected over and over, throughout many years and generations. A wonderful blend of spices and vegetables, with a taste of sweetness. One is sure to enjoy this with delicious roast beef dinner, in shepards pie and so much more!

Materials

Here are the tools you will need to make Chili Sauce:

  1. Liquid Measuring Cup
  2. Dry Measuring Cup (1 cup or 1/2 cup will work good)
  3. Tablespoon
  4. Large Roasting Pan
  5. Large Stove Top Pot
  6. Sharp Knives
  7. Cheesecloth
  8. Chopper
  9. Pint size (500ml) jars with lids and rings

Ingredients

Here are the ingredients needed:

  1. 30 medium tomatoes
  2. 6 medium onions
  3. 4 green peppers
  4. 2 red sweet peppers
  5. 1 hot pepper
  6. 3 cups celery
  7. 3 1/2 cups white sugar
  8. 2 1/2 vinegar
  9. 1 tablespoon pickling salt
  10. 3 tablespoons all spice

Peppers

  1. Wash all peppers (Green, Red Sweet, and Hot)
  2. Chop into small pieces using sharp knife
  3. Put into large roasting pan

Onions

  1. Wash onions
  2. Cut into quarters
  3. Chop using chopper
  4. Put into large roasting pan

Celery

  1. Wash celery
  2. Chop using sharp knife
  3. Using your measuring cup, measure two cups
  4. Put into large roasting pan

Tomatoes

  1. Take large pot and fill with water
  2. Put on stove, on high
  3. Wash tomatoes
  4. Take 6 to 8, depending how large you pot is, and put into hot water
  5. In your clean sink, fill part way with cold water
  6. Once the tomato skins start to split, remove tomato from hot water and put into cold
  7. Peel off the skins and core tomatoes using sharp knife
  8. Cut tomatoes into quarters
  9. Put into large roasting pan

Flavoring

In large roasting pan add:

  1. Sugar
  2. Vinegar
  3. Pickling Salt
  4. Mix well

Cheese Cloth and Spice

  1. Cut three 8x8' pieces of cheese cloth and layer them together
  2. Cut one strip of cheese cloth, long enough you can tie it, set aside
  3. In the center of the cheese cloth, put the allspice
  4. Gather it up and using the strip of cheese cloth, tie it together
  5. Put into large roasting pan

Cooking

  1. Put large roasting pan over two burners, cook on med-high
  2. Cook, stirring every 5-10 minutes for 2hrs or until chili sauce is cooked down to the right consistency

Canning Jars

  1. Clean large pot and fill with water
  2. Put on stove, turn on high
  3. Take clean jars, lids, rings and put two or three(depending how large pot is) in the hot water
  4. Take hot jar and using your liquid measuring cup, pour chili sauce from the large roasting pan to the hot jar
  5. Wipe the top of the jar with cloth or finger
  6. Remove lid and ring from the hot water, put on jar
  7. Set aside
  8. Repeat these steps until all chili sauce is canned

Note: the top of the jar must be clean before putting lid on or else it will not seal!
