A Local Favorite that I have always enjoyed at home in Hawaii. Great For any occasion and especially good for hot sunny days at the beach when served chilled.

Tools and Ingredients:

1. One Dole Tropical Gold Pineapple
2. Cutting Board
3. Sharp Cutting Knife
4. Li Hing Powder (Optional)

Picking the Right Pineapple

Being that not all Pineapples are the same. Here are a few tips to keep in mind in order to hopefully pick a ripe one.

1. A Bright Yellow Gold Color
2. A Mild Pineapple aroma at the base
3. The Pineapple should feel firm with no soft spots.
4. The crown of the pineapple should be proportional to the body of the pineapple.

First Step to Cutting the Pineapple to to Remove Both Top and Bottom

To do so, lie Pineapple on its side and cut both top (crown) and bottom (base) off.

Removing Skin

Next, Stand the Pineapple upright and begin to carve off the sides to remove the outer skin. Make sure that you are not cutting to deep into the pineapple to do so, but keeping close to the outer edge as to keep as much pineapple as possible.

Then after removing all of the skin, you will find that there are still small black dots (eyes) that need to be removed. This can be accomplished by lying the pineapple on its side and cutting diagonal slices or groves into the pineapple to remove them.

Finishing Up

The Last step is to cut the pineapple into the desired pieces. Standing the Pineapple up right, cut it in half. Then continue to proceed to cut the pineapple into pieces. To your desired size.

After finishing, place into a container to chill or onto a serving dish and enjoy,

As a local favorite, you can try adding Li Hing Powder to it.

Enjoy!
