Grill w/exposed flame

fresh sprig of spice (examples: rosemary, juniper berries)

Preperation

Begin grilling turkey as normal on the grill.

Infusing the Flavor



Take the flavor you want to infuse into the turkey and throw it directly into the flame of the grill. The flavor of the spices will travel with the smoke of the grill and be trapped inside the turkey. This will work with most spices, but works best with wood chips, like if you want a hickory flavor in the turkey.
