How to Make Killer Gluten Free White Chocolate Raspberry Brownies

Love raspberries? Can't resist gooey chocolate brownies?? Looking for the perfect Valentines dessert? You're in the right place! These downright incredible White Chocolate Raspberry Brownies will literally blow your mind. Not only are they CRAZY easy to make (all in just one bowl in fact) but they taste unbelievable! The perfect balance of gooey rich chocolate brownies with sharp raspberries and sweet white chocolate chunks... Do I really need to convince you any more?? Thought not!

P.S. They also happen to be gluten free. WIN!

Here is what you will need to make 16.

  • 110g Unsalted Butter, Cubed
  • 110g Dark Chocolate
  • 2 Eggs
  • 225g Golden Caster Sugar
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 60g Plain Fluten Free Flour (I use Doves Farm)
  • 2 tbsp Cocoa Powder
  • 120g Fresh Raspberries
  • 100g Bar of White Chocolate or Chocolate Chips

Essential Equipment

  • Large Microwavable Bowl
  • 20cm (8") Square Baking Tin

Making Your Brownie Batter (In Just 1 Bowl!)

First, lightly grease & line your tin with baking paper and set to one side.

Preheat your oven to 180°C/Fan 170°C. Put the butter into your microwavable bowl and break in the chocolate. Then pop it into the microwave in 10 second intervals, stirring well between each time, until it's nicely melted.

Next, crack one egg into the bowl and beat well. Then break in the second egg and beat again until it's nice and smooth.

Now add the sugar into the bowl and give it a really good mix until it's nice and smooth again.

Then add in the vanilla and salt and stir once more until blended.

Next, sift in the gluten free flour and cocoa powder and gently fold until you can't see any more flour.

All that's left to do now is stir through those chocolate chunks/chips. (I prefer to chop up a whole 100g bar of white chocolate as you get nice big chunks instead of little chips!)

Assembling Your Brownies

Then pour half the mixture into the bottom of your prepared tin and smooth out roughly with your spatula. Dot the raspberries all over the top and push them in slightly.

Time to Bake!

Next, pour over the remaining brownie mixture and smooth out as best as you can. Try to cover up all the raspberries.

Finally, pop it into the preheated oven to bake for 30-35 minutes. And that's it!

Your kitchen will literally smell like heaven right now... I'm so jealous!

Storing Your White Chocolate Raspberry Brownies

Now for the hard bit. Be patient and allow the White Chocolate Raspberry Brownies to cool to room temperature in the tin before transferring to chill in the fridge. Now you can remove and slice into 16 bars (a 4 x 4 grid). Store in an airtight container in the fridge and consume within 3-4 days - not that they're gonna last that long, let's be honest!
