Today I am going to show you how to make spinach rolls. They are delicious either hot or cold.

Ingredients for the Dough

To make the dough you will need:

  • 500 ml water
  • 4 Tablespoons Olive oil
  • 2 Teaspoon Salt
  • 4 Teaspoons Sugar
  • 6 Cups Flour
  • 4 Teaspoons yeast

Mixing

Add the Salt, Sugar and yeast to the flour and stir it together. Make a well in the center of the flour and add in the water and oil. Start to incorporate the flour with a spoon and then mix until it starts to clump together.

Knead

Continue to mix the dough using your hands until it forms a ball. On a floured counter-top knead the dough for 5-10 minutes.

Dividing the Dough

Split the dough into two. You will use one of these to make the spinach roll and with the other amount you can make another roll or could make mini focaccia breads like I did here:

Ingredients for the Filling

You can use whatever you like for the filling, here I used some leftover bacon, 1 chopped onion, 120g cooked spinach, grated cheese and a Sweet chili sauce.

Cooking the Spinach

Cook spinach in a little water and then drain though a sieve pushing it with the back of a spoon to get all of the water out. Here I have used frozen spinach.

Filling the Roll

Roll the dough out into a rectangular shape and spread on the sweet chili sauce, next put on your spinach, onions and then the bacon. Make sure you leave a little bit of dough along one side that isn't topped which will act as a seal to stop everything from falling out.

Next roll up the spinach roll, gently at first until you are about half way through then you will be able to roll it up faster. Once it is rolled up, cut into slices about 3 cm wide and place them flat side down on a lined baking tray.

Cheese!

Now sprinkle a little grated cheese on top then leave in a warm place to rise.

Baking

Once the rolls have risen nicely, bake in a 220 degrees Celsius oven for around 20-30 minutes until golden brown and cooked.

Now you can enjoy your spinach rolls!
