How to Make Tartare Sauce and Mayonnaise
Today we are making homemade tartare sauce. This is a delicious complement to Fish Cakes and loved by all.
As a bonus, I'll also show you how to make your own mayonnaise.

What You Will Need
- Lime juice
- About 1/8 red onion
- 1 medium pickle (we used a gurken)
- Salt and Pepper
- 10 Capers
- A few celery or parsley leaves/stems
- 1 Cup mayonnaise
You can make your own mayonnaise:
- 2 egg yolks
- 1/2 tsp Mustard
- 1 tsp Sugar
- 1 tsp Salt
- Pinch Paprika
- 75 ml Olive Oil
- 30 ml Lemon juice
- 1 tsp red wine Vinegar
- 15 ml Hot water
Making the Mayonnaise - Egg and Mustard
Put the 2 egg yolks into a moderately sized bowl with the sugar, salt and paprika and give it a good beat with an electric mixer. Drop in the mustard and beat until thoroughly mixed.
Lemon Juice and Water
Next add your lemon juice then mix.
Now with the beater going, very slowly add the olive oil, starting with a few drops progressing to a very small stream.
Now it is time for the water. Add it like you did with the olive oil.
Now on to Making the Tartare Sauce
For this stage you will need:
- Lime juice
- About 1/8 red onion
- 1 medium pickle (we've used a gurken)
- Salt and Pepper
- 10 Capers
- A few celery or parsley leaves/stems
Blending
Using a food processor blend up your sauce until it becomes a smooth consistency.
Completion
We have now finished a great tartare sauce.
You can experiment a little with the amount of lemon juice you use, adding more or less as you prefer.
