How to Make a Gingerbread Cake

A cake for one or maybe to be shared by little girls in their playhouse. However you choose to eat this gingerbread cake, you'll enjoy the texture of the sourdough and the mild warmth of the ginger.

Hard to Beat the Smell of Freshly Ground Spices...

For this cake you will need:

  • 3 ground cloves (1/8 teaspoon)
  • 1/8 teaspoon of ground ginger
  • 1/16 teaspoon of nutmeg (a pinch)
  • 1/2 teaspoon of star anise (1 big one)
  • 1/2 teaspoon coriander
  • 3/4 teaspoon cinnamon
  • 70 grams of flour
  • 15 grams of sourdough starter Sourdough Starter
  • 80 ml of warm water total
  • 25 grams of butter
  • 40 grams of sugar
  • 1/4 teaspoon baking soda
  • 1 teaspoon of cider vinegar

Start With Dry, End With Wet

In a bowl combine the dry ingredients (flour and spices), add the sourdough starter and water and mix.

...mix in half of the melted butter...

...then the sugar and baking soda...

and finally the remaining butter mixed with the cider vinegar.

Mix it all together then pour it into your small baking tin.

Bake for 30 minutes at 180C (360F) then remove from oven and allow to cool.

We've gone for an icing sugar finish complete with odd-shaped bear thing. You may choose to garnish with sliced ginger or even apple.

Pro tip: Don't eat the bear!
