Blackberry and Coconut CUPCAKE recipe

Delicious and stunning cupcakes! :D Hope you like them!

Ingredients: (for 25 cupcakes)

Cake batter:

  • 3 cups flour
  • 1 cup sugar
  • 1 cup coconut milk
  • a handfull shredded coconut
  • 1 tablespoon baking powder
  • a handfull blackberries (fresh or frozen)
  • 4 eggs
  • 1 teaspoon salt
  • 1 cup butter

Cream cheese frosting:

  • 60g butter
  • 200g cream cheese
  • 2 cups icing sugar
  • some blackberries

(bake at 175ºC for 20 min)
