How to make stracciatella cheesecake

There are a lot of diffrent ways to make cheesecake.

Fun fact: Cheesecake was invented by teh greeks!

cheesecake can change according the place you are from. Diffrent culture, diffrent cheesecake.

But have you ever tried a mix of cheesecake and stracciatella? If not then you should totally try this Cheesecake. It is a bit difficult and time costly, but it is super deliciouse.

so if you want to try this cheesecake, then you should give it a go!

Ingredients

For the Base:

  • 150g flour (5.29 oz)
  • 75 g soft butter (2.46 oz)
  • 60 g white sugar (2.11 oz)
  • 1 egg
  • 1 table spoon of cocoa poweder
  • A pinch of salt

For the filling:

  • 70g white sugar (2.46 oz)
  • A pinch of salt
  • 4 eggs
  • 200g of sour cream (5.29)
  • 500g of Mascarpone (44 oz)
  • 200g of Quark (9 oz)
  • Vanilla sugar
  • Chocolate crisps
  • 200g white couverture (7.05 oz)
  • 3 tablespoons strength
  • 70g chocolate crisps

For the topping/decoration:

  • 500g Cream (1.10lb)
  • fine, thin chocolate sprinkles

Other Materials

  • mixer
    • Stirring Bars
    • kneading bars
  • 3 bowls
  • Spoon
  • knife
  • fork
  • fridge (or any cold place)
  • oven
  • water boiler - heated stove

Making the Dough

Add :

  • 150g flour (5.29 oz)
  • 75 g soft butter (2.46 oz)
  • 60 g white sugar (2.11 oz)
  • 1 egg
  • 1 table spoon of cocoa poweder
  • A pinch of salt

in a bowl, and miz is all together using the Kneading bars of the mixer.

Making the Dough in a Ball

Tipp: If you are having a difficult time using the kneading bars, use your (washed) hands ... make sure that when using your hands everything is nice and mixed into one another. Afterwards the finished dough should look something like this.

When you kneaded it into a nice round ball, you can wrap it into cling film and put it in the fridge for half an hour. This will make the dough easier to roll out later.

Preparing the Cooking Tin

Put baking paper in the bottom of the baking tin.

Unwrap the dough from the cling film.

Putting the Dough Into the Cake Tin

Place the dough ball on a working space that is coverd in flour.

Using a roll, try to roll out the dough into a curcular shape. Put it into the baking pan carefully. Press it into a flat shape. Using a fork, carefully press up the sides to make a rim (max. 2cm).

Put the cake tin with the dough back into the fridge

Making the Topping

Add all of the following things into a bowl:

  • 70g white sugar (2.46 oz)
  • A pinch of salt
  • 4 eggs
  • 200g of sour cream (5.29 oz)
  • 500g of Mascarpone (44 oz)
  • 200g of Quark (9 oz)
  • Vanilla sugar
  • 3 tablespoons strength

Mix all of the ingredients above. 30 seconds on the lowest leven, and 2 minutes on highest level. Make sure that there are no clumps left in the mixture.

Making the Couverture

Fill a bowl with hot water, and put it onto a stove. Wait for the water to start boiling. Place a smaller bowl ontop of the bowl with the boiling water. Place 250g of the white couverture into the bowl (I only had brown couverture at home), and wait for it to melt.

Finishing the Topping

Dont wait for the couerture to cool down.

Once you take it off the stove, put it within the bowl of the topping that you already mixed. Using a spoon, Very gently mix the couverture and the topping togethe.

Adding Sprinkles

Add the chocolate sprinkles to the topping. Mix them together using a spoon.

Baking the Cake

Making the Whipped Cream

Pour 500 ml of whipped cream into a bowl.

Add whipped cream strengthner (you can also ass a bit of sugar or normal vanilla sugar)

Then mix the whipped cream until it is hard

Tipp: If you want you can add anything to the cream to make it more tasty. you can, for example, add lemon juice to make it taste more like lemon.

Making the Stracciatella Topping

Once the cream is hard, add chocolate sprinkles to the bowl.

Using a spoon, mix everything through until it is well mixed

Finishing the Cake

Once the cake is finished baking, and cooled down, put the cream on top of the cake.

Using the back of a spoon, flatten the cake. You can also put the cream in small dots ontop of the cake. You can decorate it in whatever way you want. When everything is spread out, put some sprinkles on top of the cream

Leave the cake in the form, and put the cake in the fridge for two hours!
