How to Make an Amazing Panzerotti
Ingredients:
I will not post exact amounts because this recipe can apply to one or several panzerotti
Homemade or fresh store bought pizza dough
(1 store bought dough can be split in 4 for large, or 6 for smaller panzerotti)
Tomato sauce( 3-4 Tbsp. per panzo)
Fresh or grated mozzarella
Parmigiano cheese
Flour
salt and pepper
Vegetable oil for frying or
Cut dough into equal parts. Sprinkle flour on counter or board and begin rolling each piece of dough until flat and round. Approximately 8-10 inches round.
Add 3-4 Tbsp. sauce (depending on size) to center of dough.
Sprinkle with cheeses and add ONLY 1 Tbsp each of any other topping you like.
Make sure that sauce doesn't wet edges of the dough.
Fold over and match the outer edges of the dough
Now begin folding edges over and press together about 1 inch at a time repeating process until you go around dough completely.
Dough fold should almost resemble a rope.
Using the base of the palm of your hand push down firmly all around edge to make a good seal.
Caution! do not overfill, this can cause them to open up and leak filling.
Fry panzerotti in vegetable oil on stove top for 3 minutes per side. Place on paper towel lined tray to absorb some of the excess oil.
place them on an oiled baking sheet and brush them with olive oil .
Bake at 400*f for about 20 minutes or until golden brown. No need to turn over!
