How to Make Zucchini Fritters (croquettes De Courgettes)
A favorite summer dish on all sides of the Mediterranean and Asia Minor, zucchini fritters come with many different names, because they are made and enjoyed in so many different countries.
The ingredients for the basic recipe are:
5-6 zucchini - shredded and strained ( Also use pumpkin when in season)
1 large onion - diced thin
3-4 cloves of garlic- chopped-mashed
2 eggs
1/2 cup parsley (optional : dill, mint, green onions)
4 Tbs olive oil (and more for frying them)
1-2 cups of flour
salt and pepper
1 cup Parmesan cheese ( or Feta, Romano, goat cheese, or a mix)
Served with a variety of sauces (tzatziki, horseradish, spicy tomato sauce are popular) or without.
The method is explained in the video. The amount of ingredients I used, yield about 40 croquettes, the size of a large apricot.
