Ice-cream...yes I Scream!
I have done so many ice-cream flavors that I can hardly remember what they all are but today I have another four fantastic flavors that are sure to impress.
- Mango
- Walnut and Caramel
- Pineapple
- Cardamom

Whipping the Cream
All of the ice-creams that I will be making today have whipped cream in their ingredients. Add the icing sugar to the cream and whip it until it forms soft peaks.
Pineapple Ice-Cream
You will need:
- 1/2 cup base
- 1/2 cup cream
- 85 grams of pineapple bits
- 1 teaspoon icing sugar
Adding the Ingredients
Whip the cream and icing sugar together then add the ice-cream base and pineapple pieces.
Folding
To fold use a spatula or rubber scrapper to cut down the middle of the mixture, then go around the side about half way then fold the mixture over the top, continuing until it is well combined. Folding keeps all of the air that you created when you whipped the cream in the mixture so it is light and airy. When the ice-cream mixture is properly mixed cover with cling film and put in the fridge until it is nice and cold.
Mango Ice-Cream
You will need:
- 1/2 cup base
- 1/2 cup cream
- 4 tablespoons mango puree
- 1 teaspoon icing sugar
Adding and Folding
To the whipped cream and and icing sugar add the ice-cream base and mango puree. Then fold it all together, cut down the center then around the side half way and over the top, keep going until combined. Cover with cling film and leave in the fridge to go cold.
Cardamom Ice-Cream
You will need:
- 1/2 cup base
- 1/2 cup cream
- 1 teaspoon powdered cardamom
- 1 teaspoon icing sugar
Whipping and Folding
Whip the cream and sugar together then add the ice-cream base and cardamom powder. Fold it through just like before and then cover with cling film and leave in the fridge until really cold.
Caramel and Walnut Ice-Cream
You will need:
- 1/2 cup base
- 1/2 cup cream
- 1/4 cup chopped walnuts
- 4-5 tablespoons caramel
- 1 teaspoon icing sugar
Adding Ingredients
Whip the cream and sugar until you have soft peaks then add the ice-cream base and walnuts. Fold in the base and walnuts then add 2 tablespoons of caramel that has been warmed until runny then let it cool down a little. Add it to the ice-cream mixture and quickly fold it though until well mixed. Cover with cling film and put in the fridge to chill down.
P.S. We will use the rest of the caramel later when churning.
Getting Ready
Once all of the ice-cream mixtures are cold take them out of the fridge and give them each a few folds just in case any of the mixture has separated.
Churning
Into an ice-cream maker pour one of the ice-cream mixtures and churn until the consistency is like soft serve, turn the maker off and scoop out the soft ice-cream putting it in a container. Into the freezer it goes until it has firmed up. Continue with remaining flavors.
Caramel and Walnut
Here is were we use that left over caramel (if you haven't already eaten it). While the ice-cream is churning and just about ready, add the 3 tablespoons of thick caramel (it doesn't need to be warmed) down the shoot so it can be mixed into the ice-cream leaving yummy streaks of caramel.
