I Scream for Ice-cream
Ice-cream. Cold, mysterious, enjoyed on hot and cold days. There are very few times where ice-cream shouldn't be eaten...underwater diving; while having any kind of surgery; parachuting.
A while back I submitted an instructable How to Make Ice-cream. I showed how to make the ice-cream base, then I went on to add four amazing flavors.
Today we're making more incredible flavors using the same base ice-cream recipe.
Lets get started!
Strawberry and White Chocolate Ice-cream
To make this ice-cream you will need:
- 1/2 cup Base
- 1/2 cup Cream
- 50 grams White Chocolate
- 70 grams Strawberry's (I used frozen)
- 1 teaspoon Icing Sugar
Whipping the Cream
All of the ice-creams I make contain whipped fresh cream. To do this add the icing sugar to the cream and then whip it until it has soft peaks. You may want to use an electric beater for this.
Blending and Melting
The first thing that you will need to do is make the strawberry puree. Using a food processor blend the strawberry's into a puree. Set the puree aside to defrost if you used frozen berries. Next melt the chocolate in a microwave or a double boiler.
To make your own double boiler get a bowl that fits nicely on top of a pot then pour in to the pot an inch of boiling water. Sit the bowl on top of the pot making sure the bottom doesn't touch the water as this could overheat the chocolate.
Fold, Fold, Fold
To the whipped cream add the ice-cream base and the strawberry puree and fold it all together. To fold use a spatula or rubber scrapper to cut down the middle of the mixture, then go around the side and up and over the top, continuing until it is well combined. Folding keeps all of the air that you created when you whipped the cream in the mixture so it is light and airy.
Chocolate Flavor
Now it is time to add the melted chocolate. There are a few different ways you could do this:
- Add the melted chocolate and immediately fold it into the mixture until it is fully mixed through or
- Add the melted chocolate to the mixture then leave it for a minute until the chocolate begins to set. Then use your spatula to fold it in. This method will leave bits of white chocolate all the way though your ice-cream which is really nice.
Once the ice-cream is done cover with cling film and put in the fridge until completely cold.
Mango, Chili and Lime Ice-cream
For this ice-cream you will need:
- 1/2 cup Base
- 1/2 cup Cream
- 1 large Chili (choose the level of heat to your own preference)
- 100 grams Mango Pieces
- 2 teaspoons Lime Juice
- 1 teaspoon Icing Sugar
Blending It Up
Remove the stem from the chili and add to the food processor along with the mango and lime. Blend until it is a puree. Now, I found that the amount of ingredients in my little food processor wasn't enough to make it blend so I put it in a tall container and used a stick blender to blend it up and that worked fine. Also make sure to taste the puree to ensure you like it.
Add the Ingredients Together
Wipe the cream and sugar together, then add the ice-cream base and the puree that we just made.
Folding
Just like before fold the mixture together, cut down the middle then go around the side about half way and then fold over the top and keep going until completely incorporated. Then cover with cling film and leave in the fridge until nice and cold.
Rum, Raisin and Cherry Ice-cream
To make this you will need:
- 1/2 cup Base
- 1/2 cup Cream
- 1/8 cup Raisins
- 1/8 cup Cherries
- 2 teaspoon Rum Essence
- 1 tablespoon Apple Core Wine
- 1 teaspoon Icing Sugar
Soaking
Right, the first thing to do for this ice-cream is to soak the raisins in the wine and rum essence. Leave to soak for 30 minutes, then drain the liquid though a sieve just leaving the plumped up raisins.
Folding It All Together
Whip the cream and sugar together and add the ice-cream base then the drained raisins and chopped up cherry's. Now its time to fold, cut down the middle then around the side and up and over the top and keep going until well combined. Cover with cling film and put in the fridge for a while until really cold.
Blueberry Ice-cream the Last But Not the Least
To make the blueberry ice-cream you will need:
- 1/2 cup Base
- 1/2 cup Cream
- 70 grams Blueberrys
- 1 teaspoon Icing Sugar
Blending
Again we need to make a puree, just blend up the blueberry's until it is well pureed. Then set aside to thore if you have used frozen like I did.
Love the Purple
Whip the cream and sugar then add the blueberry puree and ice-cream base and fold it all though. Cutting down the center then folding it up and over the top, Cover with cling film and leave in the fridge to chill out.
Almost Ready to Churn
When you are just about ready to start churning you will need to give your ice-creams a few folds as some of them might have split a little which it fine, just fold until combined.
Churing
Once all of the ice-creams are nice and cold it is time to start churning. Add one into your ice-cream maker and churn until the consistency is like soft serve, then remove and put in a container and put in the freezer to firm up. Wash the ice-cream maker and then repeat with the other ice-creams. Now keep in mind the Rum, Raisin and Cherry ice-cream will be quite soft as it has a little alcohol in it and alcohol doesn't freeze.
Finished!
Now all you have to do is enjoy theses nice ice-creams.
