Ice Cream Chocolate Bites

I saw this recipe on a Facebook link and decided to make one and share it with the Ible community

This is a very simple and delicious chocolate covered Ice cream bites that will test how fast can you work in a kitchen.

Here Is What You Need to Make This Dessert

  1. Ice cream, any kind you like. I opted for the Neapolitan
  2. A bag of Hershey's chipits 270g. I chose the milk chocolate since it goes better with ice cream
  3. About 3 table spoons unsalted butter
  4. A handful of rice krispies
  5. Parchment paper
  6. A cake pan

How to Make It

Start by lining the cake pan with parchment paper.

Pour the ice cream in the cake pan and press it until it covers the whole pan and it should be about 1 inch thick.

Cover the pan with parchment paper and put it in the freezer for one hour.

Remove the pan from the freezer, and remove the Ice cream with the parchment paper underneath. Chop the ice cream into squares. YOU HAVE TO WORK FAST the ice cream will start melting.

Put the ice cream squares back in the freezer for another hour.

Now is the time to prepare the hot water bath for the chocolate melt:

In a double boiler, start by melting the butter then add the chocolate stirring constantly. When the chocolate melts and becomes smooth, add a handful of rice Krispies, mix them into the chocolate and remove it from the boiler.

If the chocolate is not liquid enough, add 1/2 a table spoon of butter and stir. Keep adding until it is smooth.

Place the chocolate pot on a work surface and bring the Ice cream cubes.

Note: I separated the ice cream cubes into three small batches otherwise they would have melted before I had a chance to coat them with chocolate.

Using a fork, dunk an ice cream cube into the chocolate and turn it until it is fully coated then place it on a flat surface like a chopping board. When the batch is all covered in chocolate, put them in the freezer. ****Remember to work fast****

I had three kids watching me doing this, it is a miracle there were some left for the picture :)
