If you are thirsty and you want some refreshing liquid then you can make this easy but delicate drink. Instead of using milk or ice cream, we used egg whites. So without the cream we were capable of making a beautiful egg whites iced coffee.

Ingredients and Tools

So before you can start with the process, you need a couple of things which we have summed up down here.

Ingredients

  • 100 grams of sugar
  • 250 ml water
  • 3 eggs
  • 20 grams of grinded coffee

You can experiment with these proportions (for instance more sugar will make it sweeter and more coffee for a stronger flavor).

Tools

  • Coffee machine
  • A mixer or anything to mix with
  • Fridge
  • Freezer
  • Coffee filter

Put the grinded coffee in the filter and place the filter in your coffee machine. Add the water into the reservoir. Wait till the coffee is ready. Pour the coffee in a can or bowl and place it in the fridge. You have to wait for about 30 minutes before the coffee is cold enough. In the meantime you can continue to the next step.

Split and Mix the Egg Whites

Split the egg whites from the egg yolks and throw the egg whites into the mixer. You can make a mayonaise with the egg yolks, but we don't need them in this recipe. Then put the sugar into the mixer and turn up that crank. After some time (about 10-15 minutes) you will see that it doubles in volume and it will turn into a creamy goodness. When it is creamy enough, you don't have to make merengue :), you can take out your coffee out of your fridge and pour it gently into the egg whites mixture when it is still mixing. It is important that the coffee isn't too hot, it doesn't matter if it is a little bit warm (around 30 degrees Celsius). Don't pour too much coffee in one time into the mixture. It will turn into a creamy drink. Pour it into cups and put them into the freezer.

The Final Product

After about 30 minutes it is ready and you can take out the cups and enjoy. Or if you want something similar to an ice cream on top of the iced coffee, you have to wait a little longer (1-2 hours).
