Jalapeno BBQ Chicken Sandwich
This spicy sandwich will make your mouth water and burn from the intense flavor. As you bite you will taste the crispness of the bun, the spiciness of the chicken, and the crunch of the jalapeno. This dish is a party and appetite pleaser for all ages.
Ingredients
Jalapeno Pepper (2)
Brown Sugar
Buns
White Onion
Ketchup
BBQ Sauce
Apple Cider Vinegar
Cornstarch
Mozzarella Cheese
Sriracha
Portabella Mushrooms
Prep
Vegetables
- Dice the Jalapeno into cubes and slices
- Cut the onion into square-sized pieces
- Take off the Portabello Mushroom stem, cut the rest into 1/2 cm slices
Oven
- Preheat oven to 450
Meat
- Shred the Rotiserrie Chicken and put it into a bowl
Jalapeno Medley
- Add sliced jalapeno peppers and onions to oiled cast iron pan
- Let the onions and jalapenos cook out for and stir occasionally to avoid crispiness
- Add sliced portabella mushrooms
- The jalapenos should be a bright green and the onions should be sweet
- Add salt to taste
BBQ Sauce
- Add 1 tablespoon of ketchup into a saucepan
- Add 1/4 cup of apple cider vinegar into the saucepan
- Add 1-2 tablespoons of brown sugar
- Add 1/2 teaspoon of sriracha
- As sauce starts to boil, lower heat and add 2 teaspoons of cornstarch for thickness (make sure to stir out the chunks)
- Let it continue to boil for 3 minutes (stirring occasionally)
- Add chunks of jalapeno that was previously cut into cubes into the sauce and stir
- Taste
- Take off heat
BBQ Chicken
Add BBQ sauce to chicken and stir
Toasting the Bread
Place bread on an oiled sheet pan and bake for 3-5 minutes (depending on bread)
Assembling the Sandwich
- Put the BBQ chicken, Jalapeno mixture, and mozzarella cheese on the toasted bread and put into oven to melt (if desired)
- Take it out at the 2 minute mark
Plate and Enjoy!
