Jumbo Chocolate Chip Cookie

Hello Everybody,

Even though I'm amateur, I love baking and interested in doing experiments in it. Today I'm gonna present you a yummy Jumbo chocolate chip cookie instructable. You are probably wondering how big it is ??? I ain't telling in introduction join this journey by going through 'able and find out yourself. It was a real joy making this

Ingredients

Two images depict two procedures , First image is for jumbo cookie, second image is of ingredients for homemade chocolate chips

List for Cookie

1) All purpose flour - 1 cup + 4 tbsp

2) Brown sugar - 3/4 cup

3) Butter (cold) - 1/2 cup

4) Vanilla syrup - 2 Tsp

5) Baking soda - 1 Tsp

6) Vinegar - 1 Tbsp

7) Cocoa powder - 2 Tbsp

8) Chocolate chips - 1/2 cup

List for Chocolate chip

1) Cocoa powder - 1/2 Cup

2) Cocoa butter - 1/4 Cup

3) Honey - 4 Tbsp

4) Vanilla syrup - 1 Tsp

First lets start with homemade chocolate chips , since its a add-ins in cookie

Melt Your Butter

Why to make this when its easily available in market ?

Market variety brands of chocolate chips are available, but are they available for jumbo cookie. If you use the standard chocolate chips they won't even be visible in your jumbo cookie. Coz they are made for standard size cookies (2 inch - 3 inch). How it is possible to make Chocolate chip cookie without visible chocolate chips isn't ironic ?

Hence conclusion is to make your own customised big chocolate chips for your jumbo cookie.

Make double boiler setup and melt your cocoa butter , you can use unsalted butter too. I preferred cocoa butter for chocolatey flavour and smell

Mix

Add sifted cocoa powder, honey and vanilla syrup. Mix using spatula

Pipe It Down

Add the mixture to a piping bag, before start piping make setup for chocolate chips to settle in i.e., cut out the parchment paper.

Cut the tip of and start piping the chip, gentle press and take it leaving a point tip to make it look perfect chip.

Finish Off

After finishing your piping, freeze it for 30 mins. Yup, its done.. Your customised big chocolate chip is ready.

Now second image is the size comparison, from left first one is Hershey kisses, second is customised chip and third is standard chocolate chip.

Customised chip is bigger than standard but not as big as Hershey kisses. So its more like mini Hershey kisses

Sift all purpose flour, add brown sugar, cold butter and chocolate chips

Add sifted cocoa powder, vanilla syrup, baking soda and finally add vinegar. I used this vinegar + baking soda combination as 1 egg substitute. You can use egg if you like.

Cookie Dough - Part 3

Mix it using spatula, since its a cold butter, its little difficult to break it down without standing mixer machine. While using spatula they will crumble and start mixing by hand (of course washed hands ;P) break the butter, keeping mixing, it will come to stage where dough is fully mixed and not sticking to your hand.

Ease it up, but flattening it little bit so that its easy to roll up later. don't it as round dough ball

Seal It

Parcel it to refrigerator.... I mean pack it plastic wrap if you have, I didn't have so I kept in parchment paper and close well and refrigerated about 2 hours

Post Refrigeration

Take a silicone mat, dust the mat using flour, start rolling the dough nice and east without breakage. after few rolls you can press it out by hand too. It thickness was about 5 mm and evenly spread. Take a round plate of 9" and shape it by removing the extra.

Extra will be useful in making standard cookie

Here comes the tricky part, Put the parchment paper (baking paper) above the rolled out dough, press gently on the surface. Place the baking plate above and flip the entire setup along with silicone mat. i.e., silicone mat will be top now. since it dusted surface slowly peel off the dough onto to the baking plate with parchment paper in-between.

Now add few more chocolate chip on top surface.

Bake

The baking plate is 10 inch in size, cookie cutout size is 9 inch. If expansion happen hopefully its happens less than a inch.

Preheat the oven to 180 degree in case for microwave oven and bake for 30 mins

In halogen oven baking time is 20 mins.

Standard Size Cookie

Meanwhile let your giant cookie getting baked. Prepare cookies from extra cutout. Roll out and cut round shape using cutter or round object. My cutout cookie size was 2.75 inch

Baking time for these are 18 mins at 180 degree in microwave oven. In halogen its 15 mins at same temperature

Baked cookie was almost 3 inch

Cool Down

Put your jumbo cookie in the wire rack to cool down. You have to be careful when its hot, it will be fragile and if mishandle you'll end breaking it.

Measure It and Show Off

You wanna know my cookie size there it is... "9.5 inches"

Thank god it didn't expand more, that why I made sure that the thickness is merely more than thin.

To personally understand the cookie size, my brother was holding this in hand. The outcome was good, crispy edges, soft in the middle, above all its intact as one piece :)

This is just a comparison between standard cookie and jumbo cookie. Jumbo cookie can't be served with glass of milk as evening snack because its big enough to fill your tummy as dinner.
