Kaiserschmarrn

This year, our foreign exchange student, Nina, is being hosted by my family. She is from Austria, and for this project we decided to make a classic Austrian dessert, Kaiserschmarrn. It is a traditional food to eat after skiing in the Alps. Hopefully, this will help you explore the culinary excitements of her beautiful country.

Ingredients

8 eggs

1 ½ cups of flour

1 cup milk

2 pinches of salt

2 tbsp baking powder

4 tbsp granulated sugar

2 tbsp vanilla sugar (if you do not have vanilla sugar, just add a few drops of vanilla extract)

8 tbsp butter

Powdered sugar to sprinkle over

Applesauce to dip it in

Mixer

Two medium bowls (non-plastic for egg whites)

Measuring cup

Tablespoon measurer

Plastic spatula (for flipping)

Rubber spatula

Whisk

Frying pan

2 forks

Sifter

Small bowl for applesauce

First, separate the egg yolks from the whites.

In the egg yolks, add milk, flour, and sugar. Mix until well blended.

Next, add the sugar and salt to the egg whites, and beat on high speed until stiff.

Fold the batter into the egg whites.

Melt butter and add half into mixture and leave the other half to fry the batter.

After you put the batter into the pan, put a lid over top so it cooks thoroughly on the inside.

Cut the pancake down the middle, and check the underside so that it is a golden brown before flipping. Check the other half and flip it if it is golden as well.

Once the underside is fully cooked, take two forks and pull apart the pancake into preferred sizes.

Sprinkle sugar over top, and let the pancake caramelize to give it a sweet flavor.

Finish the Dessert

Put the bowl of applesauce into the center of the pan for dipping.

Lastly, sprinkle over desired amount of powdered sugar onto the Kaiserschmarrn.
