Kona Sugar Cookies
Sugar cookies are great. Coffee is even better. Coffee sugar cookies seems like a no brainer.
We used Kona coffee grounds for this recipe because it's what we already had ground and brewed, but any kind of coffee would work well.
This recipe yields about 3-4 dozen cookies, depending on how big you make your drops.
Ingredients
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract *optional*
1 egg
1 1/2 cup unsalted butter
2 cups sugar
3+ cups flour
1/2 cup cooled brewed coffee
1 tbs fine coffee grounds (can be ground further using a mortal and pestle)
*Adjust the amount of brewed coffee and coffee grounds to meet your taste preferences.
Mix
In a small bowl mix flour, baking powder and soda together and set aside.
In another bowl (or bowl for stand mixer), soften butter and then add sugar, cream together. Add egg, coffee, salt and vanilla extract and continue mixing until all ingredients are incorporated. Then add dry ingredients from your first bowl and mix. Add coffee grounds to give your cookies color as well as added flavor. You may need to increase the amount of grounds you add depending on how strong you want the coffee flavor.
Stir the coffee grounds into your cookie dough.
Bake
***If you want to use cookie cutters= freeze dough for 2+ hours before using***
Using a small spoon, scoop small bits of dough onto a greased cookie sheet. Keep your cookies about 2" apart as the dough will spread.
In a oven preheated to 375, bake cookies for 8-12 minutes. Cooking time will vary depending on how big your dough balls are and your specific oven, so after 6 minutes passes, keep an eye on your cookies.
Cookies!
When your cookies are done, remove them from the cookie sheet and place on a wire rack to cool.
