Laal Maans, colloquially known as Laal Maas is a popular Rajasthani curry. Laal means red and maans means meat. Laal, here is used as a prefix to denote the colour of the curry and the type of meat used to make the curry. You can make laal mass with any red meat of your choice. Our intent was to make this recipe with rabbit, but we could not get our hands on one. Hence, the goat meat.
