Leek Potato Egg Pie
So you don't have a pie pan? Neither do I. Perfect. Let's make a healthy, nutritious and you'll definitely eat it leek potato egg pie for dinnnnnnner..
Supplies
You'll need:
2 Tbsp. extra virgin olive oil
1 Leek, trimmed root, CLEANED, and cut into fine slices
2 Garlic cloves, finely chopped
1 Sweet Asian long red pepper, seeded, deribbed, and finely chopped
5 Eggs
1 Large peeled, cooked potato, chopped
3 Large mushrooms, diced
3/4 Cup pineapple, diced
3/4 Cup finely chopped parsley
1/2 Tsp. salt Freshly ground black pepper
1 Approx. 8 in by 12 in by 1. 5in pre-seasoned cast iron pan with press that can be placed in the oven to bake
Prep. time: 30 minutes
Total time: 45 minutes
Serves: 8
It's 4:30 PM. Time to cook dinner.

Prepare Potato First
Peel and slice potato to 1/4 inch, boil it in water to tender.
Fun Part: Prepare the Remaining Ingredients
Slice, dice, chop or do whatever to leek, pepper, garlic, mushroom, pineapple and parsley.
This part is my fun part of cooking. I'm good at it. When you are good at something, it's fun even if it's laborious. Nothing is fun before you are good at it. I guess there is previlege growing up underprevileged. Long story short, when I was a child, one of my big jobs was to cut raw cold potatoes by hand for 40 something sheeps (in winter there is nothing in the mountains where I lived, so people kept sheeps in the pen and fed them). The job requirements included being quick, perfect size and consistence. That's how i got my skill. Thanks those sheep I fed.
Back to cooking...
Stir Fry Vegetables
Heat 1 1/2 tbsp. of the oil in a heavy frying pan and cook the leeks over medium to high heat until they are soft - 3 to 5 minutes.
Add the garlic and pepper, cook to tender, stir (This step is called stir fry).
Add the mushroom, cook to tender, stir.
Add the pineapple, cook to tender, stir.
Add the parsley, stir.
Add the salt, a few grounds of black pepper, stir
Turn off stove.
Prepare the Egg
Crack the 5 eggs into a big bowl, seperate 4 of the egg yolks into a pouring cup.
Add a pinch of salt and black pepper to the egg, mix it.
The Vegetable Mixture Engage With the Egg Mixture
Stir in the cooked vegetable mixture to the egg mixture.
The Vegetable Mixture Marry the Egg
Before the "wedding" start, please it's time to preheat the broiler of your stove.
Heat the remaining oil in a pan that can be placed to bake in an oven.
Use a brush to coat the sides of the pan with oil too.
Pour the mixture to the pan.
I used a sandwich press pan which is about 8 in by 12 in by 1.5 in. If you use a larger pan, your pie will just come out thinner. Question: What happens if you use a smaller pan?
If you have been following me, by now you probably conclude that I have only a heavy frying pan and a sandwich press pan in my kitchen and I cook everything with them. You are right.
Look at this picture. I have no idea how I did it. I'm learning and messing around with my camera's exposure mode (shutter speed and aperture), focus, ISO and white balance, so I get messed up results. Sometimes I take a dozen shots for one thing. Every photo looks different and none looks right. Sometimes I took one shot and the result is good. I have no idea how I did it either. This picture is a classic with probably every settings went wrong. Please use some imagination how the real thing looks like before I become good at taking photos :-).
Here Comes the Potato
Place the cooked and diced potato in one single layer coving the top of the pie.
Here Comes the Egg Yolk
Brush egg yolk on top of the potato.
Pour slowly in a thin stream the remaining egg yolk along the sides of the pan.
Cook the above "marriage" over low heat until the bottom is golden brown (lift it gently with a spatula to check).
Bake the Pie
Place the pan under the broiler and cook until the egg sets and the edge golden brown.
Serve
Cut it into rectangles, squares, triangles or whatever shapes. Serve hot.
At my house, We eat it with millet soup which is on the stove at the same time when preparing the pie, no cost of more cooking time. (I'm not surprised if you don't know what is millet. It's probably the tiniest grains in this world. Suppose it contains B group Vitamin).
To make millet soup (start it first before making the pie):
1/3 Cup millet
5 Cups water
Makes 3 bowls
Bring it to boil, let it simmer until the pie is ready to serve. It is that simple.
