Chili Dog Quesadillas From Leftovers

I'm always on the lookout for creative ways to use leftovers. While staring at the assortment of miscellaneous stuff in the refrigerator, I saw chili dogs and inspiration struck, and this is the result. I timed myself, and this literally took 5 minutes from the time I started taking things out and putting them on the counter to the time the finished quesadilla came out of the microwave.

Ingredients:

  • 2 leftover hot dogs
  • 2 tbsp leftover chili sauce
  • 1/2 cup shredded cheese (I had some Mexican Four Cheese to use up)
  • Salsa (part of a jar I was trying to finish up)
  • Hot sauce (the last few dabs left in a bottle)
  • 2 Large Tortillas

Chili Time...

Once all the ingredients are laid out, spoon chili sauce onto a tortilla in a cross shape. There isn't enough chili sauce to go around, so this way the hotdogs will be sitting on a bed of sauce.

Hot Diggity Dog...

Slicing the hot dogs in half lengthwise, arrange them on top of the chili sauce. Since the dogs stick out from the edge of the tortilla a bit, slice off the ends then place them in between the hot dog/chili sauce areas.

It's Great to Be Cheesy...

Liberally spread the shredded cheese around and between the hot dog pieces. Be sure to distribute it evenly or the quesadilla will end up looking lumpy and possibly having areas of partially melted cheese.

Bringing the Fire...and Then Bringing the Heat...

If desired, add a tablespoon or two of salsa and hot sauce. Then simply cover with a second tortilla, and on a microwave safe plate, heat on high for two and a half to three minutes.

Plate and Serve...

I needed to get rid of a partial container of blackberries, so I added them to the plate. The kids attacked them and had them eaten in seconds. :)
