Leftover Chimichangas
Chimichangas are a traditional dish from the north of Mexico. That's why they are made with flour tortillas (while wheat flour tortillas are more popular in the north, in the south the corn ones are more used)
They are made sweet or savoury depending on the stuffing. Today I'm going to show you how to turn your leftovers into a delicious meal.
If your family frowns when you give them the same meal two days in a row you´ll love this instructable.
Gather Your Ingredients
Leftover steaks, shredded or ground beef, shredded chicken. Mine was from a salad I made yesterday.
Jalapeño. Optional but I believe no Mexican dish is complete without a little bit of spice.
Vegetables: I had onion and tomato, but you can make your own combinations.
Wheat flour tortillas
Cooking oil
Salt and pepper
Prepare the Stuffing
Begin by chopping the fresh ingredients. If you are using steak chop it too.
Heat a pan and sauté the onions. As the onions take more time to cook I added them first, once they changed colour I added the tomato.
Let the veggies cook until they are tender, then add the leftovers (shredded chicken).
I added the chopped jalapeño at the end.
Stuff the Chimichangas
Put the stiffing in the middle forming a rectangle.
Fold the two long sides first.
Then the short ones.
Fry Them
Heat the oil in a pan. Once it's very hot carefully drop the chimichangas, with the folded part facing down.
Once it's golden and crunchy flip them.
Now you can add toppings, like salsa, avocado, shredded lettuce, sour cream, feta cheese...
