Leftover Rice Pudding :3

So I always end up making waaaay too much rice for my ever shrinking family, and I feel bad just tossing it so leftover rice pudding! My mom likes it with craisins so that is what I tend to use, but really you can use a variety of things.... so yeah!

What You Will Need! :3

  • 2 Cups milk divided - I only use one kind of milk, not sure if it makes any difference... :3
  • 1+1/2 cups cooked rice I like to rewarm it in the microwave so it goes faster on the stove XD
  • 1/3 cup sugar
  • 1 egg, beaten
  • 2/3 cup your addition (craisins)
  • 1/4tsp salt
  • 1/2 tsp vanilla
  • 1Tbsp Butter

Cooking It :3

On medium heat in a medium~ish saucepan combine rice, 1+1/2 cup milk, sugar, and salt.

Stir it every now and then

Wait until it gets thick & creamy <3

While Your Waiting

So while your pudding is getting thickish

combine 1/2C milk, your addition (craisins), and the beaten egg

Add the egg mixture

cook for two more minutes, stirring constantly

then remove from heat immediately and add vanilla and butter.

Your Pudding Is Ready!

I like it warm but my mom likes it cold, so to cool it down I suggest putting it in a shallow container and keeping the lid off, after about half an hour I would put the lid on.
