Love Is in the Air ..
Happy Valentine's day in advance to everybody out there !..Love is in the air ...feel it, express it and spread it ..and as they say "Action speaks louder than words" ...So,to make my love feel extra special what more than baking a few sweet cookies with those few special words on it that would make him smile big and sweet.So,here goes my Valentine cookies,a very simple one and a healthy friendly one especially for my diabetic man...."I am not a pro in baking all I want is to express how much I love my man because though I can get him fancy cookies from the bakeries they will certainly lack the main ingredient that would make his heart spin and go head over heels over me and that is "MY LOVE" !! ;) 4 my lovely man.....ILU...Here goes the recipe -
Valentine cookies
Ingredients
2 cup sifted all-purpose flour
1/2 cup flax seed flour (optional)
1 cup butter softened/shortening /oil
1 cup sugar/sugar free
1/2 tsp. salt
1 tsp baking powder(optional)
2 eggs(optional)
1 1/2 tsp vanilla or your favorite flavor
Last but not the least love :D
Method:
1.In a large bowl using mixer on medium speed, cream butter/shortening and sugar/sugarfree until little fluffy . Beat in eggs and vanilla.
2.Mix and stir all the dry ingredients little by little until it forms a dough.
3.Chill dough for say 1-2 hours.
3.Roll out and cut into your desired shapes using moulds (in my case hearts,lips,teddy letters) .
4.Use a red and brown icing to color the cookies and bake in a preheated 350°F oven for 10 minutes or until its done.
5.Once they are completely baked allow it to cool.
6.Now the final touch- fill the pastry bag with your favorite frosting/icing and attach a small round pastry tip and write carefully any special message you want to mention like in my case,I love you,hug me etc and let it cool.
7.Voila, your beautiful Valentine cookies are all set to make your loved one go head over heels for you;)
Note: You can decorate your cookies with icing either before baking or after baking and cooling which ever suits you the best. I’ve added flax seed(golden flaxseed which has omega-3,fibres,protein & is gluten free ), shortening & sugar free to make it a healthy cookie 4 my diabetic valentine ;)
