Maggies Loaf

Wow...this original recipe surpassed our expectation and was enjoyed by the whole family.

Our little four year old had a blast working through all of the tasks in making this loaf, guided by her older sister.

Herbs Freshly Picked...

You'll need:

  • 1/2 Cup of sourdough starter Sourdough Starter
  • 1/2 Cup of flour
  • fresh herbs (we used thyme, oregano and rosemary)
  • 1/8 tsp salt
  • 1/2 Cup grated cheese
  • 1 egg
  • 1 tbsp milk powder (5 grams)
  • pinch of cayenne pepper (optional)

...and Carefully Chopped

Finely chop the herbs.

Sifting and Grating

Add the flour, grated cheese, milk powder and mix together.

Herbs and Egg

Mix in the herbs, and in a separate bowl beat the egg...

Mix the Egg With the Sourdough Starter

...then mix in the sourdough starter.

Note the extra support from a curious two year old...

Add the egg-mix into the floor, cheese and herb mix.

Prepare for Bake-off

The dough will be quite stiff so pull/push/herd it into the baking tin.

Bake for 20 minutes at 180C (360F).

This is amazing when served warm and it can also be toasted.

You could serve this loaf as part of a lunch or supper, or try lightly coat a slice of this loaf with olive oil then grill until golden.
