Panela is made of Sugar cane sap, it is boiled in until a thick slurry is obtained.
The thick slurry is poured in a raster and solidifies quickly.
This specific video shows how Panela is made in Colombia (pretty traditional).
Panela is drunk as a kind of tea, a piece of the sugar clock is put in boiled water and drunken hot, I prefer it hot, some people put it in the coffee to give it a more sweet taste.
Panel is made in Colombia, Ecuador, Bolivia and other south american countries, you will also see it it in India and other Asian countries.
