Mango Papaya Chili Sorbet

This sorbet perfectly combines the sweet exotic taste of the mango and the papaya with the spicy taste of the pepper. If you want a normal mango papaya sorbet just omit the pepper! 

Ingredients

Assemble your ingredients:
  • A mango
  • A papaya 
  • 1-2 strong chili peppers  ( be careful one of these mini-peppers was already strong enough but if you are a chili expert go ahead and use as much as you want
  • 3 tablespoons fresh lime juice
  • 90 grams sugar
  • 85ml water
Material :
  • Ice cream maker or freezer
  • Blender or food processor
 

Make Sugar Syrup

This step is simple: cook the water and the sugar on low heat until the sugar is dissolved, put the liquid in the refigerator while cutting the fruit.

Process/blend

Process/blend the fruit, the chili and the lime juice until smooth. 

Add the sugar syrup and process/blend until smooth.

If you have an ice cream maker churn for about 20-25 minutes if not put in freezer and mix every hour for six hours.
The final result should look like the second picture.
