Maple Banana Bread
I wanted to make banana bread and only had a little white sugar left and of course at this time flour and sugar are hard to find. I knew there were recipes with maple syrup but I changed it up a little and made this one. It’s very easy. I didn't feel like turning on my oven and made it my toaster oven! You don’t need a mixer. I used it for 10 seconds. It should be chunky and rustic. A fork or wisk are fine. I like my banana bread pristine with no nuts or other things on it to take away from the moist dense flavor . It's not too sweet. THIS IS THE BEST BB you will ever make. If you like it sweeter add more syrup. Or spread it with jelly or maple butter. ( I have good recipe for that) The real secret you cannot change, the bananas MUST to be black or almost black and over ripe. Leave them room temp 2 weeks or more sitting on your counter. Actually it may take only a few days if you use organic. they just have to be too ripe. The flavor is amazing and my family ate this loaf in less than 10 minutes with butter. ½ cup butter, melted
½ cup maple syrup
1 large egg beaten
3 meduim over ripe ripe bananas
½ teaspoon Vanilla extract
3 tablespoons milk
1/2 teaspoon of baking powder
2 cups all-purpose flour
1 teaspoon baking soda
3 tablespoons white sugar ( optional)

2 mixing bowls, Wisk or fork, 1 5X9 glass loaf pan.. which is my favorite. You can also put these in muffin tins But watch the baking time for the muffins.. They cook faster. check in 20 minutes.
Preheat Oven to 350 Degrees F (175 Degrees C).
Grease a 5x9 inch loaf pan. Measure out all the ingredients.
Mix Wet Ingredients
In a large bowl, mix the melted butter and maple syrup. Beat gently or wisk in the egg and mash bananas, leaving a few small chunks. Stir in the vanilla extract and milk.
Mix Dry Then Together
In a separate bowl, mix the flour, baking soda, and baking powder together with a wink or fork, and stir into the banana mixture until combined. Don't over mix
Pour Into Pan
Pour out and scrap into prepared loaf pan Sprinkle sugar evenly over the top. Your can add walnuts to the sugar if desired at this step. The sugar will melt and crack the top for a rustic appearance.
Bake 50 Minutes in the Preheated Oven, or Until a Knife Inserted in the Center of the Loaf Comes Out Clean.
You can also use a toaster oven but don't open it at all for at least 45 min. Also the knife might hold some banana when checking for doneness. Check in a few areas.. do not over bake!
